In the kitchen with chef Diego Morales





Last week, Mercedes from the the restaurant Alqueria de Los Lentos
in Nigüelas ordered an orange & almond cake for a special gastronomical lunch.
She had a party of 6 people coming from all over Spain and who belong to a
gastronomical club. 

I was quite flattered she thought of me for the dessert and for this special occasion,
she asked her friend Diego Morales to cook a traditional Andalusian meal. Diego is
a very renowned chef in the area. After 40 years spent in the best kitchens in Granada
(restaurants and hotels), and abroad, he is now retired and teaches 
at the Gastronomical School in Granada.

La semaine dernière, Mercedes, du restaurant Alqueria de los Lentos à Nigüelas,
m'a commandé un gâteau aux oranges et aux amandes pour un déjeuner gastronomique,
réunissant 6 personnes venant de toute l'Espagne et appartenant à un club gastronomique.

Jé'tais plutôt flattée qu'elle pense à moi pour le dessert et pour cette occasion spéciale,
elle a demandé à son ami, le chef cuisinier Diego Morales de préparer une cuisine
traditionnelle andalouse. Diego est un chef réputé de Grenade. Après avoir officié pendant
près de 40 ans aux meilleurs fournaux à Grenade et à l'étranger (restaurants et hôtels),
Diego est aujourd'hui à la retraite et enseigne à l'École Gastronomique de Grenade.


Like all the truly talented people, Diego is very humble and complety
passionate about food. It was such a pleasure to listen to him speaking about
the importance of knowing our own local products and how to eat healthy fod
while eating good food.

Comme toutes les personnes vraiment talentueuses, Diego est très humble et surtout
complètement passionné par la cuisine et les produits du terroir. C'était un pur plaisir,
rien que de l'écouter parler des produits typiquement andalous et de l'importance de
manger sainement tout en mangeant de bons plats.


That day, he prepared a typical roast baby lamb for the main course,
which smelt utterly delicious. And as first course, a typical « arroz »
a rice dish, which I would have loved to taste !

Ce jour-là, il avait préparé un agneau de lait au four, en plat principal.
Rien qu'à l'odeur, ça me faisait envie. Et en entrée un plat de riz typique,
un « arroz » que j'aurais adoré goûter !


Diego is well known for his numerous ways of preparing salt cod. 
According to him, there are as many days in the year as many ways to prepare salt cod.
I want to learn !

When he talks you can feel how much he loves his tierra granadina and its
local products. He actually created an avocado ice cream and a chirimoya
(a tropical fruit which grows in Andalusia)  ice cream which I can't wait to taste.

Diego est connu pour ses diverses manières de préparer la morue. Pour lui,
il y a autant de manières de préparer ce poisson que de jours dans l'année.
Je demande à voir !

Quand il parle, on sent tout de suite son amour pour sa terre, su tierra
granadina et ses produits locaux. Il a créé une glace à l'avocat et une glace au
chirimoya (un fruit tropical qui pousse en Andalousie) que j'ai hâte de goûter un jour.
