Sweet lemon choux



For my last Pop Up Pâtisserie, I made the Infinitely Lemon Choux,
by the wonderful Pierre Hermé.

this recipe is for you !

I didn't follow the recipe by the book and simplified it.
Still it's utter delight.


Pour ma dernière Pop Up Pâtisserie, j'ai fait des choux infiniment citron
une recette du merveilleux Pierre Hermé.

Si vous aimez le goût du citron, si vous vous sentez d'une humeur citronnée,
cette recette est pour vous !

Je n'ai pas suivi la recette à la lettre et l'ai simplifiée.
Le résultat reste délicieux.
 

Basically, they are choux filled with lemon cream, lemon chantilly and
tiny bits of candied lemon

En gros, ce sont des choux garnis de crème au citron, chantilly au citron
et de petits morceaux de citron confit

J'ai juste sauté l'étape du citron confit
 

 It's easier and quicker if you prepare the lemon cream one day before.

For the lemon cream : 

3 lemons
2 eggs
135g of sugar
165g of butter (soft)

Peel the lemons and cut the peel very thinly. Squeeze the lemons to obtain 10cl of juice.
In a bowl, mix the eggs, the sugar, the lemon peel and the lemon juice. Put it on a bain-marie (a big pan of heated water). Stir the mixture frequently until it nearly reaches boiling. The mixture must thicken.
Pour the mixture into a sieve and then into another bowl placed onto ice cubes, so that it gets lukewarm quickly. Stir the mixture until it gets lukewarm.
Cut the butter in tiny bits and add it to the mixture with an electrical blender. Work for 10 mn until the cream is perfectly smooth.
Keep in the fridge for 2hrs before using it.


For the choux

8 cl of water
10 cl of fresh milk
4g of salt
4g of sugar
75g of butter
100g of flour
3 eggs

Pour the milk and the water in a pan. Add the salt, the sugar and the butter. Bring it to a boil, stirring with a wooden spatula.
Add the flour in one go and stir energetically with the spatula until the dough is smooth and homogeneous. Stir it until the dough comes away from the sides of the pan.
Put the dough in a bowl. Add the eggs one by one. Make sure each egg is well absorbed before adding the next one.
Work the dough until it is smooth. This part is very important as while working the dough, air enters into it and the choux will rise successfully then.

Baking the choux :
Preheat the oven at 190°C.
With a spoon, place little spoonfuls of dough onto a baking tray covered with non stick paper. Make sure you leave enough space between the choux
Bake for 20 mn and DO NOT OPEN the door of the oven during baking.

For the lemon chantilly

190g of liquid cream
125g of lemon cream
1g of gelatin

Put the gelatin in a bowl of cold water. Once it melts, squeeze it and heat it up with a bit of water.
Add it to the lemon cream. Beat the liquid cream util firm. Mix the lemon cream and the chantilly.
Keep in the fridge.

Mounting the choux

Cut the choux in half. Apply a bit of lemon cream at the bottom then fill in the choux with the lemon chantilly.


C'est plus rapide et plus facile à faire si l'on prépare la crème au citron la veille.


Pour la crème au citron : 

3 citrons
2 oeufs
135g de sucre
165g de beurre (mou)


Pelez les citrons et coupez les lanières de peau très finement. Exprimez les citrons pour obtenir 10 cl de jus. Dans un bol, mélange les oeufs, le zeste de citron et le jus de citron. placez-le sur un bain-marie. Mélangez la préparation de temps en temps jusqu'au point d'ébullition. La préparation doit épaissir.
Versez la préparation à travers une passoire dans un bol placé sur de la glace pour faire refroidir la tout rapidement. Mélangez la préparation jusqu'à ce qu'elle soit tiède.
Coupez le beurre en petits dés et incorporez-le à la préparation avec un batteur électrique. Travaillez pendant 10 mn jusqu'à ce que la crème soit bien lisse.
Conservez au frigo pendant 2h avant de l'utiliser.


Pour les choux

8 cl d'eau
10 cl de lait entier
4g de sel
4g de sucre
75g de beurre
100g de farine
3 oeufs


Versez le lait et l'eau dans une casserole. Ajoutez le sel, le sucre et le beurre. Amenez à ébullition, en remuant avec une spatule en bois.
Ajoutez la farine en une seule fois et mélangez énergétiquement jusqu'à ce que la pâte soit lisse et homogène. Mélangez jusqu'à ce que la pâte se détache des parois.
Mettez la pâte dans un bol. Ajoutez les oeufs un à un. Veillez à bien incorporer chaque oeuf avant d'ajouter le suivant.
Travaillez la pâte jusqu'à ce qu'elle soit lisse. Ceci est très important car en la travaillant, des petites bulles d'air se forment et feront que les choux seront bien gonflés.

 Cuisson des choux :
Préchauffez le four à 190°C.
Avec une petite cuillère, formez des tas sur une plaque à pâtisserie recouverte de papier cuisson. Espacez les choux. Enfournez pendant 20 mn et surtout NE PAS OUVRIR la porte du four durant la cuisson.

Pour la chantilly au citron

190g de crème liquide
125g de crème au citron
1g de gélatine

Add it to the lemon cream. Beat the liquid cream util firm. Mix the lemon cream and the chantilly.
Keep in the fridge.

Mettez la gélatine dans un bol d'eau froide. Une fois qu'elle a ramolli, faites-la chauffer avec un peu pour la faire fondre. Mélangez-la à la crème au citron. Montez la crème au fouet. Mélangez délicatement la crème au citron et la chantilly.

Montage des choux

Coupez les choux en 2. Placez un peu de crème au citron à la base, puis fourrez avec la chantilly au citron.
