Epiphany




We have been celebrating los Reyes in Granada the day after with a walk in the center
of the city. The holiday in Spain always seems too long to me as the tradition is
to exchange gifts on January 6th. Well this is the first time in my life I complain about a vacation
being too long ! After the fiestas, Granada enters a period of brief tranquility before the
sales start. That day, we were walking on carrera del Genil.Whenever I pass by the church of 
Virgen de las Angustias, I have to look up as there is always a little detail which catches my attention.
I see the beautiful architectural details and at the same time, I think of all the labour it took.

Nous avons célébré les Rois à Grenade le jour d'après et nous sommes baladés dans
le centre de la ville. Les vacances de Noël en Espagne me paraissent toujours trop longues
car la tradition veut que l'on s'échange les cadeaux le jour de l'Épiphanie, le 6 janvier.
C'est bien la première fois de ma vie que je me plains que les vacances soient trop longues ! 
Après les fêtes, Granada connaît une brève accalmie juste avant le début des soldes. Ce jour·là, 
on marchait carrera del Genil. Chaque fois que je passe devant l'église Virgen de las Angustias, 
je regarde en l'air car il y a toujours un détail qui m'échappe. Je vois la beauté des ornements
 architecturaux et en même temps, je pense à l'énorme somme de travail que ça a dû représenter.


Back home, I got inspired and decided to make a galette des Rois,
a real challenge for me as I made it from A to Z, with the puff pastry taking
a good hours....but it was a labour of love !

De retour à la maison, j 'étais inspirée et j'ai fait une galette des Rois.
Un vrai défi pour moi car je l'ai faite de A à Z, pâte feuilletée comprise,
ce qui a pris quelques heures....mais c'était un acte d'amour !


 In France, to celebrate the Epiphany, we eat a galette des Rois and here
in Spain, it's the roscón de Reyes which looks like a crown and tastes more
like a brioche. I quite like the Spanish tradition in which a bean and a charm
are enclosed inside the cake. The lucky person which receives the charm is
crowned the king or queen of the day....while the unlucky person who receives
the bean has to pay for the cake !

En France, on célèbre l'Épiphanie avec la galette des Rois et ici en Espagne, on mange
le roscón de Reyes qui est une sorte de brioche en forme de couronne. Dans la
tradition espagnole, une vraie fève et un charme sont glissés dans le gâteau. 
L'heureuse personne qui reçoit le charme est élue roi ou reine du jour tandis que celle
qui tombe sur la fève doit payer le gâteau. J'aime cet humour !


 Recently I read about the old French tradition in which, the cake is divided
in as many portions as they are guests plus one which is called God's portion
or the Virgin's portion and will be given to the first beggar.

Récemment, j'ai lu que dans la vieille tradition française, le gâteau est divisé 
en autant de parts qu'il y a de convives, plus une part appelée, la part de Dieu
ou la part de la Vierge, offerte au premier pauvre qui se présente.


Now to come back to this labour of love....
making the pâte feuilletée (puff pastry) was time consuming
but not impossible !

Mais revenons à cet acte d'amour....
la confection de la pâte feuilletée a demandé pas mal de temps
mais ce n'est pas une mission impossible !

 It's only after I took my galette out of the oven
that I realized I forgot to put a charm inside.
So when we shared it with friends, there was neither king nor queen
but a clear and loud verdict : DÉLICIEUX !
So, don't hesitate to try it.....

The recipe is below

C'est seulement en sortant ma galette du four
que je me suis aperçue que j'avais oublié de mettre une fève à l'intérieur.
Alors quand nous l'avons partagé avec des amis, il n'y a pas eu de roi ou de reine,
mais un verdict clair et fort : DÉLICIEUX !
Donc, à essayer sans hésitation....

 The recipe I used comes from the new French magazine
Fou de Pâtisserie, issue n°2 (nov·dec 2013).

La recette que j'ai utilisée est tirée de Fou de Pâtisserie n°2
 (nov·dec 2013).



 Puff Pastry

(recipe from Fou de Pâtisserie n°1, which is given for robot use and I adapted it for a manual realization as I don 't have a robot)

500g of flour
150g of butter plus 450g of butter at room temperature used for the turning (tourage)
250g of water (or 12,5 cl of water)
12g of salt

1) First, prepare the dough.
Mix the flour with the 150g of butter cut in dice. Work well until the butter is completely absorbed.
Add the water and the salt. Work again until you obtain an homogeneous and sticky mixture.
Put the dough on your working table sprayed with flour and shape it into a thick square of 15·20 cm.
Cover with plastic film and put in the fridge for 30 mn.

2) Second, proceed to the turning.
Place 450g of butter at room temperature between 2 sheets of baking paper and flatten it in order to obtain a square with the same dimensions of the dough. Take the the dough out of the fridge and extend it with a rollin g pin so that its length be 3 times the size of the butter. Place the butter in the middle of the dough.

3) Fold the left part of the dough on the butter.
Then fold the right part in order to enclose the butter.

4) Extend the dough with the butter inside in order to obtain a rectangle again.

5) Turn the dough, a quarter turn anti clock wise. Fold the dough in 3 parts : fold the right part, then the left part, making sure their edges are facing each other. The opening must face you and be towards the right.

6) Extend the dough again to obtain a rectangle, making sure you do not tear it. Give it a quarter turn. Fold it in 3 parts and place it in the fridge for 30mn.

7) Repeat twice the steps 4 to 6.

USEFUL TIPS
Make sure the butter for the turning and the dough are of the same temperature to obtain beautiful layers.
Don't extend the dough too thinly to avoid that the butter goes through the dough.
The longer the pastry rests in the fridge between 2 series of turns, the better it is as the pastry will not get deformed during the baking.

La pâte feuilletée

(recette tirée de Fou de Pâtisserie n°1 qui est donnée pour une réalisation avec robot et que j'ai adaptée pour une réalisation à la main, vu que je n'ai pas de robot)

500g de farine
150g de beurre plus 450g de beurre à température pour le tourage
250g d'eau ( ou 12,5 cl)
12g de sel


1) Tout d'abord, préparez la détrempe.
Mélangez la farine avec le beurre coupé en morceaux. Travaillez jusqu'à ce que le beurre soit bien incorporé. Ajoutez l'eau et le sel. Mélangez jusqu'à obtention d'un mélange collant et homogène.

2) Déposez la pâte sur votre plan de travail fariné et formez un carré épais d'environ 15·20 cm de côté. Enveloppez de film alimentaire et mettez au frais 30mn.

3) Procédez au tourage :
Mettez 450g de beurre etntre 2 feuilles de papier cuisson et aplatissez·le pour former un carré de la même taille que la pâte. Sortez la détrempe, étalez·la au rouleau de manière à former un retangle deux fois plus long que le beurre. Posez le beurre au centre de la pâte.

4) Repliez la partie gauche de la pâte sur le beurre.

5) Rabattez la partie droite de manière à enfermer le beurre.

6) Étalez la détrempe avec le beurre à l'intérieur de manière à former à nouveau un rectangle.

7) Faites pivoter la pâte d'un quart de tour dans le sens contraire des aiguilles d'une montre. Pliez la pâte en trois : rabattez la partie droite, puis la partie gauche en veillant à ce qu'elles soient bien bord à bord. L'ouverture (la clé) doit être face à vous et sur la droite.

8) Étalez à nouveau la pâte en rectangle en veillant à ne pas la déchirer. Tournez·la d'un quart de  tour, pliez·la en 3, filmez·la et mettez·la au frais 30 mn. Recommencez 2 fois les étapes 6 à 8.

CONSEILS DE PRO
Veillez à ce que le beurre de tourage et la pâte soient à la même température pour réaliser de beaux feuillets.
N'étalez pas trop finement la pâte lors du tourage pour éviter que le beurre ne perce la détrempe.
Plus le temps de repos au froid est long entre les deux séries de tours, moins la pâte se déformera à la cuisson.

Preparing the galette

For this recipe, you will need 2 pieces of dough of 150g. You can divide the rest of the dough into pieces of 150g/250g and keep them in the freezer for 6 months.

Once you have made the dough and the turning, divide the dough and cut 2 equal pieces of 150g.
Wrap them in plastic film and keep them in the fridge for 30 mn.

Cover generously your working table with flour and extend the 2 pieces of dough with a rolling pin. The pastry must be 1/2cm thick.
Before cutting the dough, work it well with your hands so that it doesn't break.

Take a circle of 22cm diameter and cut around with the tip of a knife. In order not to damage the dough, fold the discs in 2 when you handle them.

Place each disc on a plate and keep in the fridge, meanwhile you prepare the almond cream.

The almond cream

150g of almond powder
15g of maïzena
120g of icing sugar
15g of rhum
120g of butter
90g of whole eggs (approx. 2 small eggs)


The recipe is given with instructions with a robot and I adapted it for a manual realization.

In a big bowl, place the butter cut in little pieces and mix in order to obtain a smooth mixture.

Add the almond powder and the icing sugar. Mix well. Then add the maïzena without entering too much air.

Add the eggs and mix gently with an electrical mixer. Add the rhum.

The making of the galette

1 egg
1 egg yolk
90g of sugar
11cl of water

Take the discs of dough out of the fridge. Place one disc on a baking tray covered with baking paper. Fill in a pastry bag with the almond cream. Mix the egg and the egg yolk and put it aside. Make the syrup : mix the water and the sugar in a little pan. Bring it to a boil and leave it to cool. Preheat the oven at 180°C.

With the pastry bag, garnish the disc of dough with the almond cream. At this stage, place a charm in to the almond cream if you wish. Apply a brush moistened with water on the edge of the disc without soaking the dough.

Place the second disc on the first one and turn it a quarter so that the layers of pastry work in both directions. Make sure the edges of the 2 discs are sealed and press with your fingers to evacuate the air.

Turn the galette upside down to conceal the fingertips and apply the egg mixture with a brush to make the galette golden. Let it rest in the fridge during 15 mn.

Take the galette out of the fridge. With the back of a knife, make a groove on the circumference every 1 cm, making sure you don't cut the dough.

Make a tiny hole at the center of the galette with the tip of a knife. From that point, draw half circles until the edge to make a rosette pattern. Be careful to mark the dough without cutting it.  
 Bake at 210°C (th.7) during 15 mn then at 180°C (th.6) during 40 mn.

Once you take it out of the oven, apply the syrup onto the galette.



Préparation de la galette

Pour la recette, vous aurez besoin de 2 pâtons de 150g. Vous pouvez diviser le reste de pâte en pâtons de 150g/200g et les conserver au congélateur pendant 6 mois.
Une fois la pâte pétrie et le tourage effectué, séparez·la en 2 pâtons équivalents. 
Enveloppez·les de film alimentaire et mettez au frais pendant 30 mn.

Farinez ensuite généreusement votre plan de travail et abaissez vos 2 pâtons sur 1/2cm de hauteur. Avant de procéder à la découpe, détendez bien la pâte avec les mains afin qu'elle ne casse pas.

Prenez un cercle de 22cm de diamètre et découpez tout autour avec la pointe d'un couteau. Pliez en deux les disques de pâte lors des manipulations afin de ne pas les abîmer.

Mettez chaque disque dans une assiette et réservez au réfrigérateur le temps de préparer la crème d'amandes.



La crème d'amandes

150g d'amandes en poudre
15g de maïzena
120g de sucre glace
15g de rhum
120g de beurre
90g d'oeufs entiers (approx. 2 petits oeufs)


La recette est donnée pour une réalisation avec robot et je l'ai adaptée pour une réalisation à la main.

Dans un récipient, mettez le beurre en morceaux et mélangez afin d'obtenir un beurre pommade.

Ajoutez la poudre d'amandes et le sucre glace et mélangez. Puis ajoutez la maïzena sans intégrer trop d'air.

Ajoutez les oeufs et mélangez doucement avec un batteur électrique. Ajoutez le rhum.


Le montage

1 oeuf
1 jaune d'oeuf
90g de sucre
11cl d'eau


Sortez les disques de pâte du réfrigérateur. Placez un disque sur une plaque recouverte de papier  cuisson. Remplisssez une poche à douille unie de crème d'amandes. Mélangez l'oeuf et le jaune d'oeuf et réservez pour la dorure. Réalisez un sirop en mélangeant l'eau et le sucre : faites bouillir et laissez refroidir. Préchauffez votre four à 180°C.

À l'aide de la poche à douille, garnissez le disque de pâte avec la crème d'amandes en escargot. À cette étape, insérez une fève dans la crème d'amandes si vous le souhaitez. Passez un pinceau imbibé d'eau sur les bords du disque sans détremper la pâte.

Posez le second disque sur le premier en le tournant d'un quart de tour afin que le feuilletage travaille dans les deux sens. Soudez bien les deux disques ensemble en chassant l'air avec vos doigts.

Retournez la galette afin de cacher les traces de doigts et dorez avec le mélange d'oeufs. Laissez reposer au réfrigérateur pendant 15 min.

Sortez la galette du réfrigérateur et chiquetez les bords. Pour cela, entaillez le bord du disque tous les 1 cm en biseau avec le dos d'une lame de couteau.

Faites un petit trou au centre de la galette avec la pointe d'un couteau. À partir de ce centre, effectuez des demi·cercles jusqu'au bord pour réaliser un motif en rosace. Attention, il faut entailler la pâte sans la traverser. Mettez à cuire à 210°C (th.7) pendant 15 mn puis à 180°C (th.6) pendant 40 mn.

Dès la sortie du four, badigeonnez votre galette du sirop refroidi.
