Churros and market day

It was in Madrid some years ago, soon after I met Monchéri. We were doing what
Madrileños excel at, that is ir de tapeo, going from bar to bar and living the night
until its end. I am not much of a drinker but the nocturnal ambiance in Madrid is
irresistible. In the wee hours of the morning, Monchéri said with a beaming smile,
and now the best is to come...churros con chocolate !...In Spanish, he uses words I find
amusing to say that churros are exactly what a stomach needs after a night like this.
In our village, we are very lucky to have the best churros ever, dixit my boyfriend.
Maria has been making churros since 24 years and without being a churros expert,
I understand what Monchéri means. Good churros must be light, airy and not too oily,
which is quite tricky as they are deep-fried in oil. And Maria's churros satisfy
all those criteria and are really the best I've ever tasted until now.

I watched Maria's gestures as she prepared a racíon for us, last
wednesday morning. She opens her churreria at 8am every day. By 8.30am,
she's ready to serve churros and hot chocolate and by 11am, it's all gone.
Wednesday is market day. I remember having pushed her door at 10.30
in the morning on a couple of wednesdays and being unlucky because
she already ran out.

This is my favorite step : cutting the churros with scissors and eating them of course.

Maria runs the churreria on her own. Sometimes her daughter comes
round to give her hand. I love her place for its simplicity and warm hospitality.
It's like family. After all, like Monchéri says, churros and chocolate are
a delicious way to come back to childhood.

Afterwards I went to see my friend Fernando who sells his vegetables at the market.
I'm getting a bit obsessed with the idea of making a turnip Tatin tart but didn't find
the time this week. It is also fennel season at the moment and I've got two recipes,
I can't wait to try, braised fennel with orange and a fennel and crab cake.

It's saturday night and it's very late....
I do hope Monchéri will get up early and
bring some churros for breakfast tomorrow morning...
