Slow life in Andalusia : planting potatoes and making chocolate biscuits





This post is titled Slow life in Andalusia but even if my blog's life has tragically
slowed down since the last post, I can assure you my life is the total opposite.

I am busy with various things and the busier I get, the more I enjoy the
tranquil life around me here in Andalusia. The other day, while walking
in my village, I bumped into those men planting potatoes the old way.

depuis le dernier post, je peux vous assurer que ma vie n'a rien de ralenti.

Je suis occupée à diverses choses et plus je m'affaire, plus j'apprécie le côté
tranquille de la vie en Andalousie. L'autre jour, en me baladant dans le village,
je suis tombée sur ces hommes qui plantaient des pommes de terre à l'ancienne.

 I've told you before, I'm not quite the countryside girl but how 
I love living here, amidst olive and almond trees. 
It's the first time in my life, I've been so close to nature and this is so good.

 ce que j'aime vivre ici, au milieu des oliviers et des amandiers.
C'est la première fois de ma vie que je suis  si proche de la nature
et c'est bon...et beau....

 Being busy doesn't help me from baking and those past days,
I made a great discovery the recipe of chocolate sablés by Pierre Hermé.
Definitely a must if you love chocolate !

Même si je suis occupée, il y a toujours du temps pour la pâtisserie
et ces derniers jours, j'ai fait une grande découverte : la recette des sablés
au chocolat par Pierre Hermé.
Le must pour tous les amoureux du chocolat !
La recette est ci-dessous.




Chocolate sablés biscuits

Recipe by Pierre Hermé

180g of flour
155g of dark chocolate 70% cacao
30g of non sweetened cacao
155g of non salted butter (softened)
120g of brown sugar
5g of baking soda
3g of sea salt (fleur de sel)
1 teaspoon of vanilla extract

Combine the flour, the cacao and the baking soda in a bowl.
Crush the chocolate in tiny little bits.
Work the butter until it becomes nearly creamy. Add the brown sugar, the sea salt and the vanilla extract.
Mix well. Then add the mixture flour/cacao/baking soda. Mix thoroughly and add the chocolate bits.
Work the mixture until it gets really homogeneous but don't work too much otherwise the biscuits will be crumbly.
Pour the dough on a board and form 4 rolls of 2cm diameter. Wrap them tightly in a film in order to avoid bubbles of air. Put them in the fridge at least for 2 hours. They will harden. 
Before taking them out of the fridge, preheat the oven at 170ºC.
Cut the rolls in slices 2cm wide. 
Place them on a baking tray covered with non stick baking paper. Make sure you leave space between them as they will spread.
Bake for 11mn. Leave to cool completely before removing them from the baking paper.
They come out very soft from the oven and will harden while cooling down.
You can keep them at least 7 days in a metallic box. 
Well, in my case they just lasted 2 days...

Pierre Hermé says that the sea salt (fleur de sel) acts as a flavor enhancer and accentuates the taste of chocolate and it's true. And if you're a chocolate addict, those biscuits are for you !

Sablés au chocolat 

Recette de Pierre Hermé

180g de farine
155g de chocolat noir 70% cacao
30g de cacao non sucré
155g de beurre doux (mou)
120g de cassonade
5g de bicarbonate de soude
3g de fleur de sel
1 cuillerée à café d'extrait de vanille

Dans un bol, mélangez la farine, le cacao et le bicarbonate de soude.
Concassez le chocolat.
Travaillez le beurre en pommade puis ajoutez la cassonade, la fleur de sel et l'extrait de vanille.
Mélangez bien.
Ajoutez ensuite le mélange farine, cacao et bicarbonate de soude.
Malaxez et ajoutez le chocolat en morceaux. Arrêtez de malaxer dès que la pâte est bien homogène. Celle-ci ne doit pas être trop travaillée sinon les sablés sont plus friables.
Versez la pâte sur un plan de travail et formez 4 boudins d'environ 2cm de diamètre. Filmez-les en serrant bien pour éviter la formation de bulles d'air et laissez-les durcir 2h au frigo.
Avant de les sortir du frigo, préchauffez le four à 170ºC.
Découpez des rondelles de 2 cm d'épaisseur. Placez les sablés sur une plaque de cuisson recouverte de papier cuisson en veillant à laisser un espace entre eux car ils s'étalent à la cuisson.
Faites cuire 11mn.
Laissez-les complètement refroidir avant de les décoller du papier cuisson.
Les sablés se gardent au moins 7 jours dans une boîte métallique.
Dans mon cas, ils ont duré 2 jours...


Le mot de Pierre Hermé : la fleur de sel agit comme un exhausteur de goût et fait encore plus ressortir le goût du chocolat. C'est vrai et franchement si on aime le chocolat...ces sablés sont trop bons !
