Andalusia : baking a potato pie with garlic cream-

Since I read this recipe a few days ago via Côté Maison, I've been obsessed by it : potato pie with garlic cream. And the fact is that we've got plenty of potatoes to use, freshly picked by Monchéri with a friend in the nearby sierra. A manly affair to which I didn't participate as we had to get up early on a sunday morning after being partying until 3am the day before. So no potato picking for me, that day....which actually, I regretted because the potato picking was followed by
a great lunch by a roaring fire and of course, lots of wine and guitar playing.....so, yes next time, I'll put on my rubber boots and my parka and dig those potatoes.....


But just for now, I'll concentrate on this recipe
which I want to serve to some guests tomorrow for lunch,
as I think it will be perfect for our grey chilly weather, served with a good Rioja wine.

This recipe is by French chef Éric Sapet 
which recommends to serve this potato cake with lamb.

{ POTATO PIE WITH GARLIC CREAM }
{  GÂTEAU DE POMMES DE TERRE À LA CRÈME D'AIL  }
Baking time : 50 minutes
For 6 persons

INGREDIENTS

  • 2 rolls of puff pastry
  • 1 kg of potatoes
  • 1 egg, beaten
  • Thyme flowers (or just fresh thyme)
  • Salt
  • Pour la crème d'ail
  • 2cloves of garlic
  • 8 tbsp of thick cream

PREPARATION

Potatoes

-  Peel the potatoes and cook them in salted water.
- Drain them and cut them in slices of 1 cm thick.

Garlic cream

- Peel and slice thinly the cloves of garlic. Cook them in the cream during 5 mn, then blend.

Preparation and baking

- Preheat the oven at 180 °C. Place the first disk of puff pastry onto a mold covered with non stick baking paper.
- Place the slices of potatoes onto the pastry, forming a crown and cover with the garlic cream. Sprinkle with thyme.
-  Before covering with the second disk of puff pastry, with a small brush, apply some beaten egg on the edge. Seal carefully the edge of the puff pastry and apply some beaten egg on the top.
-  Make a little hole at the center of the pastry and place a little chimney inside made with aluminium foil.
- Bake for 45 mn.

Depuis quelques jours, je suis obsédée par cette recette lue sur Côté Maison:
le gâteau de pommes de terre à la crème d'ail. Et il se trouve qu'en ce moment,
on regorge de pommes de terre fraîchement récoltées par Monchéri
et un ami dans la sierra, près d'ici. Une affaire d'hommes à laquelle je n'ai pas participé,
car il fallait se lever tôt un dimanche matin après avoir fait la fête jusqu'à 3h du mat.
Donc, pas de cueillette de patates, pour moi, ce jour-là....d'ailleurs, j'ai bien regretté
parce que la récolte était suivi d'un super repas au coin de la cheminée, avec bien sûr,
mucho vino.....beaucoup de vin et de musique à la guitare...donc, la prochaine fois,
pas d'hésitation, je mettrai mes bottes en caoutchouc et ma parka et en avant pour les patates....


En attendant, je vais me concentrer sur cette recette
que je voudrais servir à mes invités demain pour le déjeuner,
un petit plat parfait pour ce temps gris et pluvieux, servi avec un bon Rioja.

Voici la recette via Côté Maison.
C'est une recette du chef Éric Sapet
qui recommande de servir ce gâteau de pommes de terre
avec une belle tranche d'agneau,

GÂTEAU DE POMMES DE TERRE À LA CRÈME D'AIL
Temps de cuisson : 50 minutes
Pour 6 personnes

INGRÉDIENTS

  • 2 rouleaux de pâte feuilletée pré étalée
  • 1 kg de pommes de terre
  • 1 oeuf battu
  • Fleurs de thym
  • Sel
  • Pour la crème d'ail
  • 2 têtes d'ail
  • 8 cuil. à soupe de crème fraîche

PRÉPARATION

Les pommes de terre

- Epluchez les pommes de terre et faites-les cuire à l'eau salée.
- Egouttez-les, puis coupez-les en tranches de 1 cm.

La crème d'ail

- Pelez et coupez finement les gousses d'ail. Faites-les cuire dans la crème pendant 5 min, puis mixez.

Montage et cuisson du gâteau

- Préchauffez le four à 180 °C. Déroulez un disque de pâte feuilletée soit directement sur une plaque recouverte de papier cuisson, soit dans un moule.
- Disposez les tranches de pommes de terre en rosace et nappez de crème d'ail. Assaisonnez, mettez une autre couche de pommes de terre, puis étalez à nouveau de la crème d'ail. Parsemez de fleurs de thym.
- A l'aide d'un pinceau, passez un peu d'oeuf battu sur le pourtour avant de recouvrir le gâteau du second disque de pâte feuilletée. Soudez hermétiquement les bords et dorez le dessus à l'oeuf battu.
- Découpez un trou au centre du feuilletage et placez-y une petite cheminée en papier d'aluminium.
- Enfournez pour 45 min.
