Strawberry pavlova to celebrate Spring and a birthday






 Yes officially Spring is here, yet it's raining and it's cold.
On friday morning I meant to bake a triple chocolate cake for Monchéri's 
birthday and instead spent the whole morning at the printer's.
And when finally, I found some time...horror...no more flour in the house..
and with the torrential rain, my urge to venture to the supermarket vanished.
But, guess what you can do with eggs, sugar and milk cream and strawberries...
a strawberry pavlova of course !

Oui c'est officiellement le printemps mais il pleut et il fait froid.
Vendredi matin, j'ai voulu faire un gâteau au trois chocolats
pour l'anniversaire de Monchéri et finalement j'ai passé toute la matinée
chez l'imprimeur. Et enfin quand j'ai pu me libérer...horreur...
plus de farine dans la maison...avec la pluie qui tombait à verse,
l'urgence d'aller au supermarché a vite disparu.
Mais, devinez ce que l'on peut faire avec des oeufs, du sucre, de la crème
fraîche et des fraises....une pavlova aux fraises, bien sûr !
 I must say I'm not a big fan of meringue. Once I had an omelette norvégienne
(a classical dessert made of vanilla ice cream on génoise and entirely covered
with meringue) in a restaurant in Paris. It was beautifully made and flamed
directly at our table but the layer of meringue was so thick I could barely finish it. 
Since that time, I can only have a reasonable amount of meringue.

Je dois dire que je ne suis pas très fan des meringues. J'ai une fois goûté une
omelette norvégienne dans un restaurant à Paris, très joliment présentée et
flambée directement à notre table mais la couche de meringue était si épaisse
que cela m'avait presque écoeurée. Du coup, à part les tartelettes au citron
meringuées, je ne fais pas beaucoup de meringue.
 Luckily Monchéri loved his strawberry pavlova...although I'm sure he would
have preferred a chocolate cake...that will be for another day!

Heureusement Monchéri a aimé sa pavlova...quoique je suis sûre qu'il aurait préféré
un gâteau au chocolat...mais ce sera pour un autre jour !

Recipe

Strawberry pavlova

250g of strawberries

For the meringue:
4 egg whites
200g of sugar
1 spoonful of maïzena
1/4 of vanilla bean

Chantilly
20cl of liquid cream
1 spoonful of icing sugar
1 packet of vanilla flavored sugar

Preheat the oven at 90ºC.
Prepare the meringue. Cut the quarter of the vanilla bean in half and scatter the grains in the sugar. In a big bowl, beat the egg whites until stiff. Towards the end add the sugar then the maïzena without beating.
Line the oven tray with non stick paper. Cut a circle of non stick paper, with 26 cm diameter.
Pour the meringue on the circle, making sure it doesn't go beyond the circle.
Put in the oven at mid-height and bake for 1 hour. Watch if the meringue doesn't brown too much. If it does, cover it with a sheet of baking paper or lower the heat.
Turn off the oven but leave the meringe inside for 30 mn.
Take it out of the oven and let it cool on a rack.
Carefully, take off the paper from the base of the meringue.
Wash the strawberries and dry them. Cut the stem and slice them.
Make the chantilly. Beat the cream which must be very cold.
When it thickens and sticks to the whisk, add the icing sugar and the sugar.
Before serving, cover the meringue with the chantilly then garnish with the strawberries.


Recette

Pavlova aux fraises

250g de fraises

Pour la meringue :
4 blancs d'oeufs
200g de sucre
1 cuillerée à soupe de maïzena
1/4 de gousse de vanille

Chantilly
20cl de crème liquide
1 cuillère à soupe de sucre glace
1 sachet de sucre vanillé

Préchauffez le four à 90ºC.
Préparez la meringue. Coupez en deux le quart de gousse de vanille, et à l'aide d'un cure-dent, répartissez les grains dans le sucre. Dans un grand bol, battez les blancs en neige très ferme. Vers la fin, ajoutez le sucre puis la maïzena sans fouetter.
Recouvrez la tôle du four avec du papier cuisson. Découpez un cercle de papier cuisson d'un diamètre de 26 cm.
Répartissez la meringue sur le cercle en faisant bien attention de ne pas déborder du cercle.
Enfournez à mi-hauteur et faites cuire pendant 1 heure. Surveillez la cuisson. Si la meringue colore trop, posez une feuille de papier cuisson par dessus ou baissez la température.
Éteignez le four mais laissez la meringue à l'intérieur pendant 30 mn.
Sortez-la du four et laissez refroidir sur une grille.
Enlevez le papier du dessous de la meringue, avec précaution.
Lavez les fraises et séchez-les. Coupez la queue et coupez-les en lamelles.
Préparez la chantilly. Battez la crème qui doit être très froide.
Lorsqu'elle épaissit et adhère au fouet, ajoutez le sucre glace et le sucre vanillé.
Au moment de servir, couvrez la meringue de chantilly et décorez avec les fraises.

Oh what a lovely Pavlova. I love Pavlova but seldom get it here at home or in restaurant/bakery. Happy birthday to your loved ones and happy Spring. I do hope it warms up for you soon though it is also raining where I live. Better than snow which they are still getting in Atlantic Canada and parts of USA.
