The "Cooking with tea" workshop at the Chaparra Eco Lodge - an illustrated story



 Last saturday I had the pleasure to welcome a small group of women, at
the beautiful Chaparra Eco Lodge in the Alpujarras mountains, for the 
"Cooking with tea" workshop. As soon as you arrive in this magical place,
you feel the peacefulness and quietness....very appropriate for a cooking course!

Samedi dernier, j'ai eu le plaisir d'accueillir un petit groupe sympatique, pour
le cours de "Cuisinons avec du thé", dans un superbe endroit, là-haut dans les
montagnes des Alpujarras, le Chaparra Eco Lodge. Dès l'arrivée dans
cet endroit magique, on ressent une sensation de quiétude et de calme serein...
tout à fait approprié pour un cours de cuisine !
 We started making Earl Grey madeleines. As usual, I ask participants
to work in pairs to make the experience more fun and friendly.

Nous avons commencé par des madeleines au Earl Grey. Comme d'habitude,
je demande aux participants de travailler en couple car c'est plus sympa et convivial.
 Sometimes easy and simple recipes like madeleines can be daunting. I had just explained
to the lovely and eager participants that the little bump on the madeleines is produced by
a thermal shock. And when we took the cakes out of the oven, we all laughed because in fact,
the supposed thermal shock didn't seem to happen as the madeleines kept coming out flat!
Never mind, they had a fluffy texture and tasted very nice with the subtle Earl Grey flavor. 
For this course, I used exclusively teas from Palais des Thés, my all time favorite tea supplier.

Parfois, même des recettes simples et faciles comme des madeleines peuvent causer 
du souci. Alors que je venais juste d'expliquer que la fameuse petite bosse de la madeleine est
causée par un choc thermique, au moment de sortir les madeleines du four....nous avons 
toutes ri parce qu'elles sont sorties toutes plates! Mais heureusement, au moment de la 
dégustation, la texture  moelleuse et le parfum subtil du thé Earl Grey étaient bien présents. 
Pour ce cours, j'ai utilisé exclusivement des thés de 
Palais des Thés, mon fournisseur de thés préféré.
 We then carried on with the matcha and parmesan biscuits.

Ensuite, nous avons continué avec des biscuits salés au matcha et parmesan.
 
 I always feel a bit nervous to use an oven I'm not familiar with and 
especially as this was a gaz oven. But as our lovely hostess Karin, said
"No drama!"...with a little bit of attention, our matcha biscuits didn't burn.

Je suis toujours un peu nerveuse quand je dois utiliser un four que je ne connais pas.
Surtout s'il s'agit d'un four à gaz comme celui-ci. Mais comme le dit Karin, notre 
adorable hôtesse "Pas de drame !"....avec un peu d'attention, nos biscuits au matcha
n'ont pas brûlé.
 After making those two recipes, in which tea is added directly as an ingredient I then explained 
how to make a white chocolate ganache infused with Thé des Moines a delicious fragrant tea
by Palais des Thés, based on a Tibetan recipe. 
The day before I made choux to fill them with this tea flavored ganache which we had
for our well deserved tea time.

Après avoir fait ces deux recettes dans lesquelles le thé est ajouté directement comme ingrédient,
j'ai ensuite expliqué comment réaliser une ganache au chocolat blanc parfumée au Thé des Moines,
un thé délicieux créé par Palais des Thés, inspiré d'une recette tibétaine.
La veille, j'avais préparé des choux pour les garnir avec cette ganache parfumée au thé
et que nous avons savourés pour notre goûter bien mérité.

As I was about to carry on with a tea sauce to serve with fish, there was
a general mutter of protest.....the fish could wait but please let's have tea now!
So, we all sat on the sunny terrace by the pool and had more choux and shared 
the chocolate tart flavored with Oolong tea which I had prepared the day before. 
We also drank tea, of course, chosen from a selection of green teas, black teas and Oolong tea.

J'allais continuer avec une sauce au thé pour accompagner du poisson, mais il y eut
des murmures de protestation....le poisson pouvait bien attendre, mais maintenant....
prenons le goûter ! Nous prenons place sur la terrasse ensoleillée près de la piscine.
C'est l'heure de découper la tarte que j'ai réalisée la veille avec une ganache au chocolat
parfumée au Oolong et de terminer nos petits choux garnis de ganache au thé des Moines.
 Bien entendu, c'est aussi le moment de déguster du thé, parmi
une sélection de thés verts, noirs et Oolong.
 At the end of the course, each participant packed up her baking goods to take 
home and also received a gift bag with six samples of different teas from
Palais des Thés.

À la fin du cours, chaque participante repart avec ses produits et un sac-cadeau
contenant des échantillons de six thés différents de Palais des Thés.
Although the course was scheduled to end at 7pm, it was too tempting
to stay on and enjoy those views.

Normalement, le cours devait se terminer à 19h, mais c'était trop tentant de rester pour
admirer le paysage.

 Karin, our lovely hostess runs this place as a glamping site and
set up two yurts which you can rent.

Karin, notre charmante hôtesse a créé un site de glamping dans ce
merveilleux endroit et posé deux yourtes que vous pouvez louer.
  And how about this view which greets you in the morning....Cool, non?

Et que me dites-vous de cette vue au matin, en sortant de la yourte...Cool, non ?

Looks like a lovely time baking and taking tea with you Lala. Your friend, Karin has a lovely place too and I'll bet sleeping in the yurt is a wonderful experience.
