An all-pancake lunch




I missed the "galette des rois" but I'm ahead on the Chandeleur (Pancake Day)
with this all-pancake lunch. When I'm short of ideas, I turn to my recipes de toujours,
the recipes I know nearly by heart, like the pancakes. Also, making pancakes in Sweden,
takes me back to my childhood. I still remember the sketches, the teacher made us draw
in our notebook, of a little black frying pan with a flipped pancake, comes February.


J'ai loupé la galette des rois mais je suis en avance sur la Chandeleur
avec ce repas tout crêpes. Quand je suis à court d'idées, je me réfugie dans 
les valeurs sûres. Et puis faire des crêpes en Suède, ça me rappelle mon enfance.
Je me souviens encore de la frise que l'instit nous faisait dessiner dans notre cahier
au moment de la Chandeleur, une petite poêle avec une crêpe en l'air.


My all-pancake lunch is very simple but delicious: savory pancakes with mushrooms,
bacon bits, cheese and herbs with béchamel and a Tatin pancake.

 Mon repas tout crêpes est très simple mais délicieux : des crêpes aux
champignons, lardons, fromages et herbes avec béchamel et une tatin de
crêpes.

Savory pancakes with mushrooms, bacon bits, cheese and bechamel

To make the pancake batter
250g of flour
3 eggs
1/2 liter of milk
50g of melted butter or 2 tablespoons of sunflower oil
1 pinch of salt

thyme, black pepper - for the savory pancakes

2 tablespoons of sugar, 1 pinch of vanilla-flavored sugar
1 teaspoon of rum - for the sweet pancakes


For the bechamel
1 tablespoon of flour (10g approx)
15g of butter
150ml of milk or a bit more
salt, black pepper, ground nutmeg

For the filling
250g of mushrooms
150g of bacon bits
200g of grated cheese - preferably a mixture
emmenthal-cheddar-mozarella
1 clove of garlic
parsley
oil


Start preparing the pancake batter. In a big bowl, put the flour then its center add the eggs, the melted butter or oil, salt and pour the milk progressively. Mix well in order to obtain a smooth, homogeneous mixture without lumps.

Pour the batter in 2 recipients. One for the savory pancakes and another for the sweet pancakes.



*For the savory pancakes, add thyme, black pepper and another pinch of salt.

*For the sweet pancakes, add the sugar, the vanilla-flavored sugar and rum.


While the batter is resting, prepare the bechamel. In a medium pan, put the flour and the butter together and cook on low heat. Mix well once the butter is melted then add a tablespoon of milk and mix well in order to avoid making lumps. Pour the milk progressively, stirring with a wooden spatula until it comes to a boil. The mixture must thicken. Thin down with milk if the bechamel is too thick to your liking. Season with salt, black pepper and ground nutmeg. The béchamel must have a creamy consistency. Set aside.

Peel and slice the garlic and wash the mushrooms. Cut the mushrooms in thin slices. Pour a bit of oil in a frying pan and sauté the mushrooms with the garlic and the bacon bits. Set aside.

In the same frying pan greased with butter, cook the pancakes (2 or 3 per person depending on the appetite). Stack them on a plate. Then garnish each pancake one by one with the mushrooms and bacon bits in the center of the pancake. Spread some grated cheese on top and cover with béchamel.

In order to serve the pancakes, in a parcel shape, like I did, fill each pancake with just a small quantity of the mixture mushrooms, bacon bits, cheese and béchamel and close the pancake with a linen thread.
Otherwise, fold the pancake in three.

When the pankaques are filled, place them in the frying pan on high heat, with a bit of butter or oil until they're golden brown and a bit crunchy. Serve warm with a green salad.


Tatin pancakes (for 4 persons)
3 pancakes
6 apples (Gala or Pink Lady)
20g of butter
30g of sugar

For the caramel:
60g of sugar
40g of butter
a bit of water



Peel the apples. Cut them in four and take out the core. In a big frying pan, place the butter and the sugar and cook on high heat. Cook the apples while stirring gently with a wooden spatula. Cook until the apples are tender and slightly caramelized.
Remove from heat and leave to cool down in the frying pan.

Prepare the caramel. In a pan, put 60g of butter and 40g of sugar with a little water on moderate heat. Cook until the caramel takes a beautiful amber color.

Grease a circular mold with butter or cover it with baking paper. I used a disposable aluminium mold covered with baking paper. Pour the caramel (it doesn't matter if it becomes hard as it will liquefy again in the oven) in the mold and arrange the apples in an harmonious way.

Heat the oven at 200ºC. In a frying pan greased with butter, cook 3 pancakes. Place them one by one on the apples. 
Put the mold in the oven until the top of the pancakes be golden and slightly crunchy.
Take the mold out of the oven and wait a few seconds. Then place a round dish on the mold and turn it over. To be enjoyed immediately or lukewarm.

Crêpes aux champignons, lardons, fromage et béchamel


Pour la pâte à crêpes 
250g de farine
3 oeufs
1/2 l de lait
50g de beurre fondu ou 2 cuill. à soupe d'huile
1 pincée de sel
thym, poivre noir - pour les crêpes salées
2 cuill à soupe de sucre, 1 pincée de sucre vanillé,
 1 cuill à café de rhum
(pour les crêpes sucrées) 

Pour la béchamel
1 cuill à soupe de farine (10g environ)
15g de beurre
150ml de lait ou plus

Pour la garniture
250g de champignons
150g de lardons
200g de fromage râpé - de préférence un mélange
emmenthal-cheddar
1 gousse d'ail
persil
huile


Commencer par préparer la pâte â crêpes. Dans un saladier, mettre la farine. Faire un puits et y mettre les oeufs, le beurre fondu ou l'huile, le sel et verser le lait petit à petit. Bien mélanger pour obtenir une pâte lisse, homogène et sans grumeaux.
Verser la pâte dans 2 récipients. L'un pour les crêpes salées, l'autre pour les crêpes sucrées.

*Pour les crêpes salées, ajouter du thym, du poivre et une pincée de sel en plus.

*Pour les crêpes sucrées, ajouter le sucre, le sucre vanillé et le rhum.


Pendant que la pâte à crêpes repose, préparer la béchamel. Dans une casserole moyenne, mettre la farine et le beurre et faire cuire à feux doux. Bien mélanger lorsque le beurre est fondu puis verser d'abord une cuillerée à soupe de lait pour éviter les grumeaux. Bien mélanger et verser le lait au fur et à mesure tout en remuant jusqu'à ébullition et que le mélange épaississe. Délayer avec le lait. Assaisonner avec le sel, le poivre et la muscade. Réserver la béchamel.

Émincer la gousse d'ail et laver les champignons.  Couper les champignons en lamelles. Verser un peu d'huile dans une poêle. Faire revenir les champignons avec l'ail et les lardons. Réserver.

Toujours dans une grande poêle beurrée, faire les crêpes (2 ou 3 par personne selon l'appétit). Les empiler sur une grande assiette. Puis garnir les crêpes une à une avec les champignons et les lardons au centre. Parsemer de fromage râpé et couvrir avec la béchamel. 

Pour présenter les crêpes sous forme d'aumonière, mettre seulement une petite quantité de garniture et fermer la crêpe avec une ficelle de lin.
Sinon, plier la crêpe en 3.

Une fois que les crêpes sont garnies, les placer dans la poêle bien chaude avec un peu de beurre ou d'huile pour les faire dorer. Servir chaud avec une salade verte.



Tatin de crêpes (pour 4 personnes)
3 crêpes 
6 pommes (du type Gala ou Pink Lady)
20g de beurre
30g de sucre

Pour le caramel:
60g de sucre
40g de beurre
un peu d'eau

Éplucher les pommes. Les couper en quartiers et vider le centre. Dans une grande poêle, mettre le beurre et le sucre. Mettre sur feu vif. Faire cuire les pommes tout en remuant délicatement avec une cuillère en bois. Faire cuire jusqu'à ce que les pommes soient tendres et légèrement caramélisées. Laisser refroidir dans la poêle hors du feu.
Préparer le caramel. Dans une casserole, mettre 60g de sucre et 40g de beurre et un peu d'eau sur feu modéré. Laisser cuire. Le caramel doit prendre une belle couleur ambrée. 

Beurrer un moule rond ou le recouvrir de papier cuisson. J'ai utilisé un moule jetable en aluminium recouvert de papier cuisson. Verser le caramel et poser les pommes dessus de manière uniforme.

Chauffer le four à 200ºC. Dans une poêle beurrée, faire cuire 3 crêpes. Les poser une à une sur les pommes.
Mettre le moule au four jusqu'à ce que le dessus des crêpes soit doré et croustillant. 
Sortir du four et attendre un peu. Placer ensuite un plat sur le moule et retourner l'ensemble. Déguster de suite ou tiède.
